Definition HACCP

HACCP standards are defined and required in the Codex Alimentarius and in EU Regulation 852/2004.

Clear guidelines are thereby prescribed for the HACCP system, how they must be created and according to which criterion the CCPs must be evaluated (decision tree).

HACCP hereby stands per definition for “Hazard Analysis and Critical Control Points”. Danger analysis itself is the focal point, which describes and evaluates all process points. Hereby the risk analysis can take place for ex. with the help of FMEA.  As a result the definition of CCPs and the respective intervention measures, records and corrective measures ensues from the entire HACCP system.
